- 3 each Fisher Boy® Fish Fillets
- 6 each Corn Tortilla
For the Taco Toppings
- 6 tbsp Shredded Monterrey Jack
- 6 tbsp Iceberg Lettuce, shredded
- 6 tbsp Prepared Salsa
- 6 tsp Sour Cream
- 2 tbsp Scallions, sliced
For the Pan Roasted Corn
- 1/2 cup Frozen Corn
- 1 tsp Vegetable Oil
Directions
- Prepare the fish fillets per the package instructions. Wrap the corn tortillas in foil and warm in the same preheated oven for approximately 10 minutes.
- Preheat a non-stick sauté pan over a medium-high setting. Add the vegetable oil and corn to the pan. Cook for 2-3 minutes until lightly browned and warmed through.
- Cut the fully cooked fish fillets in half lengthwise. Assemble the fish tacos using your favorite combinations of ingredients.
